Erin Tachi and Ashley Bender are the co-owners of The Flour Shoppe , LOU’s new vegan bakery on Baxter Avenue.
After an unfortunate accident left Ashley completely blind in one eye for months, the duo made lemonade out of lemons — or should we say, The Flour Shoppe out of flour. Their combined forces bring sugar lovers a plethora of sweet vegan treats Thursday through Sunday, from noon to 6 p.m.
They each have previous baking business savvy — Ashley from her vegan cake bakery Sugar High Louisville and Erin from her doughnut-focused shop Julian’s Kitchen — to the new venture.
“I don’t think the accident was a blessing, but I don’t know if [the shop] would be here without that happening,” Ashley says.
