Earlybird Bagel Shop rolling into Schnitzelburg

We bet you’ve never had a cacio e pepe bagel before, until now.

The local bagel company has been operating as a pop-up in LOU since 2022.

Local small-batch bagel company Earlybird Bagel Shop is opening a brick-and-mortar retail store in a shared space with Six Forks Burger Company at 1039 Ash St. The bakery has been rolling out bagels since 2022 via pop-ups and online orders, but soon you’ll be able to get its bold-flavored bagels and schmears in-person.

The bakery got the keys to the new digs back in November, and thanks to a $50,000 Midi Loan from Metro’s METCO program, Earlybird was able to purchase equipment + build out the new storefront.

Here’s a taste of what’s to come:

  • Hand-rolled bagels — plain, cacio e pepe, za’atar and sea salt, French toast, sesame
  • Bialys (the bagel’s lesser-known cousin ) — onion-poppyseed, brie and hot honey
  • Original schmears — Bloody mary, smoked salmon dill, ube blueberry
  • Sandwiches + more
  • And possibly, bagel holes ?
