New farm-to-glass bar opens in the Highlands

Tonight, Dec. 15, a new Highlands farm-to-glass bar concept called Epiphany is kicking off its four-day grand opening celebration at 4 p.m.

Located at 1525 Highland Ave. in the former sorting room of the Baxter United States Postal Service location, the full bar features house-made cocktails, wine, snacks, and 12 local beer taps — which will eventually pour its own beers.

Let’s take a closer look at the key players behind the concept, its menu, and space.

🤝 Meet the team

Epiphany is a venture between four partners: Ivor Chodkowski, co-founder of the former NuLu farm-to-table restaurant Harvest, Abby Chodkowski, Kelley Spillson, and Nicholas Clarka homebrewer who had the “epiphany” for the concept in his garage.

Maggie Bray, the former brewery of Wild Hops Brewery in Logan Street Market, will head up Epiphany’s brewing operations in 2023.

🍸 Drinks and snacks

The cocktail menu features seven local variations of classic drinks that range $11-$14. The Farmer’s Tan, is a riff off of a dirty gin martini featuring Bandelero’s Kentucky “olive” brine and the Pawpaw’s Painkiller makes use of one of the region’s most misunderstood fruits — the pawpaw.

Until the brewery is up and running, you can find local and regional beers from breweries like Mild Wide Beer Co. and Gravely Brewing.

Epiphany is also serving snacks from local producers. Here are a few of our picks:
  • Kenny’s “Beermento” cheese dip — A blend of cheeses washed in IPA and is served with baguette crostini
  • Red Hog dry-cured salamis — fennel, chorizo, or pepperoni
  • Froggy’s elote popcorn — lime, cilantro, smoked paprika, cheese

🛋️ The vibe

Co-founder Abby Chodkowski is behind the look and feel of the space, which modernizes the industrial space — think: oversized warehouse windows — with plush furniture, wooden tables, and leather seats.

Epiphany’s grand opening will last through Sunday and feature $10 cocktails and $6 beers. After that, it will be open daily from 4 p.m. to midnight.

Tropical with a chance of tangy

Louisville-based food and beverage consultant Flavorman has a few predictions for your 2023 taste buds.

The custom beverage development company — who has worked with household names like Jones Soda and OceanSpray — says that tropical and tangy beverages are in for the New Year and 2022’s favored flavors of watermelon, cherry, apple, and grape are out.

According to the flavorman experts, we can expect more bevvies with pineapple, mango, grapefruit, elderflower, and lavender as patterns transition toward functionality, simplicity, and natural alternatives in the beverage world.

In terms of sustainability, drink companies will take the “less is more” approach to color, packaging, and design with a continued focus on environmentally-friendly materials.

With 30 years in the beverage industry and 80,000+ drink formulations, Flavorman compiles its annual trends summary by examining drink projects that have passed through its laboratory over the last year.

Editor’s pick: In September, a new musical about Louisville’s beloved heavyweight boxing champ Muhammad Ali was announcedand now, another famous Louisvillian will take the stage.

“The Untitled Unauthorized Hunter S. Thompson Musical” will be one of five 2023-2024 productions from La Jolla Playhouse in San Diego, CA.

The gonzo musical is still in development, but once complete will tell the story of Thompson’s pursuit of the American dream — with fireworks and peacocks promised to be part of the show.
